The Headlines:
In the role Sr. Yeast and Fermentation Scientist you will provide scientific expertise, leadership and support in the areas of beverage production, engineering, manufacturing quality laboratories, corporate quality laboratory and projects for new beverage development. You will engage in major project conception, planning, organization, and implementation. You will provide scientific expertise and leadership for the development and implementation of methods and production processes related to new product formulation. You will lead the experimental design and work on projects related to microbial stabilization and detection for new beverages based on beverage formulation review and testing. This position assures quality and consistency of Molson Coors and contract brands across 11 domestic North American breweries and craft breweries. This role reports into Manager, Microbiology and Yeast Fermentation, partnering with Corporate Quality, Brewing Optimization, Product, Process and Packaging Innovation Teams, Procurement and Breweries to deliver enterprise objectives.
The Responsibilities:
- Leads high level microbiology work with production, engineering, manufacturing quality laboratories and corporate laboratory to support the production of new products.
- Develops and executes flash and tunnel pasteurization test designs to determine micro stabilization parameters for new product categories and optimizing existing products.
- Develops and implements new methods, including rapid PCR methods, related to new product categories and changing business needs, leading experimental trials to support new product development.
- Identifies and evaluates novel advanced techniques and equipment to measure yeast viability/vitality, yeast and bacteria identification and rapid detection.
- Provides leadership and expertise to the breweries regarding optimization of yeast propagation, yeast handling and yeast storage practices.
- Provides technical support to Purchasing, New Product Developers, Food Safety and Supplier Quality Teams in working with manufacturers to close gaps quickly for new projects.
- Reviews and updates production specifications related to pasteurization, stabilization, and ingredients for new beverages and optimization of existing beverages.
- Troubleshoots and helps resolve brewery micro and yeast fermentation issues.
- Writes and reviews standards and test methods for microbiology and propagation methods and practices, ensuring standards and procedures are up to up-to-date and accurate.
The Other Qualifications:
- You have a Bachelor of Science degree in microbiology or a science related field and 6 to 8 years of microbiology experience in the brewing or beverage industry.
- In-depth knowledge of yeast propagation systems, yeast handling and storage, and fermentation.
- Highly skilled in advanced technologies including rapid molecular detection techniques, advanced microscopy techniques, bioinformatics, and molecular typing techniques.
- Expert knowledge of flash and tunnel pasteurization.
- Thorough understanding of brewing and beverage product analysis and test methodologies to support microbiology, stabilization, and fermentation projects.
- Ability to identify, evaluate, develop, and implement new technologies and methodologies in the laboratories and production.
- Comprehensive understanding of brewing and beverage science.
- Problem solving skills to resolve complex concerns related to microbiology, yeast management practices and fermentation performance.
- Ability to effectively teach brewing and beverage microbiology to diverse audiences.
